BBQ Dinner Plate

INGREDIENTS
1x 280g DeCosti Tomato & Herb Prawns or Lemon & Butter Prawns, skewered
1x 280g DeCosti Barramundi Skin on Fillets
Lemons, Sliced
Parsley
1 tbsp Olive Oil
Salt & Pepper
1x 375g DeCosti Seafood Salad, to serve
4 Dinner Bread Rolls, to serve
Lemons, to serve
Chives, to serve
Aioli, to serve
METHOD (BBQ pre-heated)
1. Cut Barramundi fillets in half
2. Lay 4 sheets of aluminium foil and brush each lightly with olive oil.
3. Place Barramundi skin side down, sprinkle each with salt and pepper. Place sliced lemon, parsley and olive oil. Wrap securely, making sure that each parcel is completely sealed
4. Place DeCosti Tomato & Herb Prawn or Lemon & Butter Prawns on skewers around 4 or 5 prawns per skewer depending on size.
5. Place Barramundi on pre-heated oiled BBQ cook for around 8-10 minutes until cooked
6. Place Prawns on pre-heated oiled BBQ cook for around 5-7 minutes until cooked turning once
7. Serve on plates with a bread roll, seafood salad, lemon and sprinkle with chives
Handy Hint: If using wood skewers sook in water for minimum 30 minutes to reduce the wood burning on the BBQ otherwise use metal skewers
