Chilli Prawn Fettuccine

Serves 2 or double for family of 4


1 x 260g De Costi Seafood Raw Prawn Meat
250g fettuccine
1 tbsp olive oil
1 onion, diced
2 garlic cloves, finely diced
¼ cup white wine such as sauvignon blanc
1 cup cherry tomatoes, halved
1 cup spinach

Optional- 1 long red chilli, finely diced


1. Cook pasta according to packet with a splash of olive oil and pinch of salt. Reserve ¼
cup of pasta water when straining
2. Heat 1 tbsp of oil and sauté onion, garlic and chilli
3. Deglaze pan with white wine
4. Add cherry tomatoes and prawns. Cook for a few minutes.
5. Add cooked pasta, ¼ cup pasta water, salt and pepper. Gently wilt spinach at the end
6. Serve immediately with parmesan
