Crumbed Whiting Caesar Salad

Ingredients
4 slices sourdough bread, torn into chunks
Olive oil spray
2 tbsp olive oil
2 packs De Costi Crumbed Whiting
1 head cos lettuce, washed and torn
½ cup Caesar dressing
4 boiled eggs, cut in half
2/3 cup shaved parmesan
Method

Cook crumbed whiting fillets at 200C in air fryer for approximately 5-minutes each side, until golden and crispy. Set aside.
- Preheat oven to 180ºC. Line a baking tray and place torn sourdough bread. Spray evenly with olive oil spray and bake for 10-15 minutes until bread is golden and crisp. Remove from oven and set aside to cool.
- Heat olive oil in a frypan over medium heat. Add crumbed whiting fillets and cook for approximately 4 minutes on either side until golden. Set aside on paper towel to cool.
- Add lettuce and Caesar dressing to a bowl, toss until lettuce is coated before arranging on a serving platter.
- Top lettuce with sliced boiled eggs, sprinkled parmesan, crumbed whiting and breadcrumbs. Serve immediately
