Fried Rice with Garlic Prawns

Fried Rice with Garlic Prawns

Serves a family of 4


Ingredients:

4 free range eggs, whisked
1 tbsp olive oil
4 garlic cloves, finely diced
4 spring onions, sliced
2 x 260g raw prawn meat
4 cups white rice, pre-cooked and cold (or 2 cups raw)
2 cups frozen peas and corn
3 tbsp reduced salt soy
2 tsp sesame oil
1 lime, juiced

Method:


1. Lightly spray wok with oil and cook egg like an omelette. Chop egg and set aside

2. Heat wok with olive oil. Saute garlic, spring onions and prawns for a few minutes
3. Add cooked rice, frozen peas, corn, soy sauce, sesame oil, lime juice and egg
4. Stir-fry all together for a few minutes until well combined
5. Adjust seasoning with salt and pepper if required. Evenly serve into bowls


Optional: Add bacon or chilli
