Grilled prawn, avocado and watercress salad with citrus dressing

2x De Costi Raw Prawn Meat
Olive oil spray
1 large bunch watercress, washed and torn
½ red onion, thinly sliced
½ cup coriander leaves, washed and roughly chopped
1 avocado, sliced thinly
Juice of 1 grapefruit (approximately 4 tbsp)
4 tbsp olive oil
1 tsp Dijon mustard
- Preheat barbeque grill or a grill pan and spray with olive oil spray. Add prawns and grill for 2-3 minutes each side until cooked through. Remove from heat and set aside to cool slightly.
- To prepare the salad, combine watercress, red onion, coriander leaves and avocado in a large bowl. Add cooled prawns.
- For the dressing, whisk together grapefruit juice, olive oil and Dijon mustard in a small bowl until emulsified. Pour over salad and toss well. Serve immediately.
