Mexican Prawn Taco Bowl
1x 260g De Costi Raw Prawn Meat
3 Tbsp Mexican Seasoning
3 Tbsp Olive Oil
1 cup Canned Black Beans washed
1 cup Canned Corn Kernels washed
1 Avocado smashed
1 punnet Cherry Tomatoes, sliced
1/4 Red onion, diced.
1 Oakleaf Green, washed.
METHOD (Stove Top)
1. Place De Costi Raw Prawn Meat, Mexican seasoning and olive oil into a large bowl, mix until all prawns are coated. Set aside to marinate for 10 minutes
2. Heat fry-pan on medium heat, cook marinate prawns for 3 minutes each side. Remove from pan and set aside.
3. Place oakleaf green on the bottom of the bowl, topping with Mexican prawns, black beans, corn, avocado, corn chips, cherry tomatoes and red onion. Divide out between 2-4 bowls.
4. Squeeze lime juice over the entire dish topping with jalapeno, sour cream and coriander.
