Pan fried Hoki with Asian Greens and Sweet Chilli Jam
Serves 2 -3
Time 20 minutes
INGREDIENTS
1 x 300g DeCosti New Zealand Hoki Skin On Fillets
1 Tblsp Vegetable Oil
½ tsp Sesame Oil
1 Bunch Baby Buk Choi, halved & washed
1 Bunch Broccolini, halved
1 Small Red Capsicum, thinly sliced
100g Snap Peas
½ cup Chilli Jam
¼ cup Water
Garnish
Sprigs Coriander
2 Tblsp Fried Shallots
METHOD (Pan fry)
1. Heat vegetable & sesame oil in a large non-stick pan over a medium heat 2 minutes.
2. Add the prepared vegetables to the pan along with the chilli jam and water, stir-fry 3 -4 minutes.
3. Add the DeCosti NZ Hoki to the pan and cook 2 minutes on each side, carefully remove fillets from the pan.
4. To Serve: Divide the vegetables and chilli jam evenly between the serving plates, top with the NZ Hoki fillets.
5. Garnish with the fried shallots and coriander sprigs.
Notes: Sweet Chilli Jam is available at the supermarket or Asian grocery stores
