Prawn Asian Salad
Time: 10 minutes
Serves: 2-3
INGREDIENTS
Salad
1x 260g De Costi Cooked & Peeled Prawns
¼ Rice Vermicelli Noodles
½ Iceberg Lettuce, shredded
1 Carrot, fine matchsticks
½ Cucumber, fine matchsticks
2 cups of Beansprouts
Coriander leaves
Dressing
1 Lime, juiced
1 Tbsp Fish Sauce
Red Chilli, finely sliced
METHOD: (No Cooking required)
1. Combine the dressing ingredients in a small jar, give it a shake then set aside for 10 minutes.
2. Soak the vermicelli noodles in hot tap water for a few minutes, this ensures they don’t overcook, drain.
3. Arrange the noodles and remaining salad ingredients on a large plate or toss together in a bowl. Top with De Costi Cooked & Peeled Prawn.
4. Drizzle over the dressing or toss through and enjoy.
