Prawn, Halloumi & Watermelon Skewers

2 x 270g pkts DeCosti Seafood Raw Prawns, about 62 (3 per skewer)

21 thin wooden skewers (30cm)
1 tbsp olive oil
1 lemon, juiced
1/4 cup mixed fresh herbs (basil, mint and coriander)
1/4 fresh watermelon, cubed into 42 pieces (2 per skewer)
3 x 180g packets of haloumi, cubed in 42 pieces (2 per skewer)

1. Soak wooden skewers for 5 minutes to minimise burning
2. Mix together oil, lemon juice, fresh herbs and prawns in a dish, set aside
3. Prepare watermelon and haloumi. Ensure pieces are a minimum of 2cm to prevent
breaking when skewering
4. Skewer 3 prawns, 2 halloumi and 2 watermelon pieces on each skewer, until all
ingredients are used
5. Cook on medium heat BBQ or pan covered for 2 minutes on each side
6. Serve with your choice of sides
