Prawn Poke Bowls

Prawn Poke Bowls

Serves 2 or double for family of 4


Ingredients:


1 cup raw brown rice, cook according to packet
2 tbsp rice wine vinegar (1 for rice, 1 for cabbage)
2 tbsp soy sauce, reduced salt
1 tsp sesame oil
2 tbsp spring onions, sliced (save some for garnish)
1 x 260g Decosti cooked and peeled prawns
½ cup frozen edamame
½ cup red cabbage, shredded
½ cup cucumber, peeled into ribbons or sliced
1 avocado, diced

Method:


1. Cook brown rice in rice cooker with 1 tbsp vinegar
2. Combine soy, sesame and spring onions in a bowl and add prawns to marinate
3. Thaw edamame according to packet
4. Shred cabbage and marinate with the other 1 tbsp of vinegar
5. Prepare cucumber and avocado
6. Serve all together and drizzle marinade over the top
Optional: add chilli flakes, pickled ginger, drizzle with kewpie mayo or sriracha
