Prawn, Prosciutto & Roasted Asparagus Tart

Prawn, Prosciutto & Roasted Asparagus Tart

Serves: 2 or double for a family of 4
Prep time: 10 minutes
Cook time: 20 minutes

Ingredients:
- 2 sheets of frozen puff pastry
- 1 tbsp milk
- 2 bunches asparagus, ends trimmed
- 2 tsp olive oil
- 3/4 cup cream cheese, room temp
- 1 x 260g pkt cooked prawns, tails removed
- 1 x 100g pkt prosciutto
- 60g bag of rocket


Method:

1. Pre-heat oven to 200c. Separate sheets of pastry and allow to thaw slightly.
2. Place thawed pastry sheets back on top of each other, smoothing out any air bubbles
3. Cut in half to create 2 rectangles. Place onto a lined baking tray
4. Cut a 1cm border around the edges, ensuring not to cut all the way through. Prick the
center of the pastry with a fork. Brush edges with milk and bake for 20 minutes
5. Drizzle asparagus with olive oil and season with salt and pepper. Roast for the remaining
10 minutes and rotate the pastry tray
6. Remove pastry and asparagus, allow to cool to room temperature. Spread cream
cheese on the pastry base, top with roasted asparagus, prosciutto, rocket and prawns
