Salt & Pepper Squid with Greek Salad
Time: 10 minutes
1x 260g De Costi Salt and Pepper Squid
10-12 Cherry Tomatoes, sliced
¼ Red Onion, sliced
½ Cucumber, chopped
Feta Cheese, crumbled
½ Cup Kalamata Olives, pitted
2 Tbsp Olive Oil
1 tsp Minced Garlic
2 Tbsp Lemon Juice
2 Tbsp Red Wine Vinegar
Pinch of salt and pepper
METHOD: (Stove Top)
1. Cook DeCosti Salt & Pepper Squid in a pre-heated oiled pan for 3-4 minutes turning frequently.
2. Remove the squid and drain on absorbent paper.
3. Toss together cherry tomatoes, red onion, cucumber, Kalamata olive and feta cheese in a bowl and top with salt and pepper squid.
4. Finish with drizzling dressing over the entire salad.
