Sweet Chili Prawns with Pea & Corn Fritters

Makes: 8
Prep time: 10 minutes
Cook time: 12 minutes

Ingredients:
- 1 x 260g pkt cooked prawns
- 1/2 cup sweet chilli sauce
- 1/2 cup SR flour
- 2 free range eggs
- 1 x 420g can peas, rinsed
- 1 x 420g can corn kernels, rinsed
- 2 tbsp olive oil

Method:
1. Mix together prawns with sweet chilli sauce, set aside
2. Add flour to a large bowl and make a well in the center
3. Add eggs and mix into a thick batter. Add peas and corn and mix well. The batter will
loosen
4. In a non-stick pan, heat 1 tbsp of oil on medium. Use a 1/4 cup to scoop fritter batter into
the pan and cook for 2 - 3 minutes on each side or until golden
5. Cook 4 fritters at a time and repeat step 4 with remaining batter. Drain fritters on kitchen
paper
6. Stack fritters with sweet chilli sauce between each layer, top with prawns and serve with
side salad
