Crumbed Whiting with Kale Slaw
Serves 2 -3
Time 10 minutes
INGREDIENTS:
1x 275g De Costi Crumbed Whiting Fillets
Oil
Dressing
¼ cup Quality Mayonnaise
2 tblsp Lemon Juice
¼ tsp White Pepper
To Serve
Lemon Wedges
2 cups Coleslaw
1 cup Kale, washed & finely sliced
METHOD
1. Heat oil in a large shallow frying pan over a medium heat for 2 - 3 minutes.
2. Shallow fry crumbed whiting fillets turning frequently every 3 - 4 minutes.
3. Remove and drain on absorbent paper. To keep fillets warm, place in an oven at a low temperature.
4. Combine the coleslaw, kale and dressing ingredients together in a small bowl and mix well.
5. Serve crumbed whiting fillets with coleslaw and a wedge of lemon.
Handy tip: Crumbed Whiting fillets are an ideal snack with drinks when friends drop over, served with fries or lime & wasabi mayonnaise.
