Salt & Pepper Squid Peach Salad

Ingredients
260g De Costi Salt and Pepper Squid
1 cup Olive oil
3 Peaches, seed removed, thick slices
1 Oakleaf Lettuce
15 Watercress stems
100g Goat Cheese
200g Pine Nuts
Balsamic Glaze
Method (Stove Top)
1. Heat fry pan on medium heat with olive oil. Shallow fry De Costi Salt & Pepper Squid, for 8-10 minutes turning 1 once, or until golden brown. Remove squid and place on absorbent paper.
2. Now place sliced peaches on heated pan and heat for 4 minutes turning once. Add pine nuts toss in pan until golden brown
3. Place oakleaf lettuce, watercress, goat cheese, roasted pine nuts and peaches on a plate. Topping with Salt & Pepper Squid & drizzle of balsamic glaze. Serve
