Spanish prawn and chorizo rice

Ingredients
2x De Costi Seafood Raw Prawn Meat
1 tbsp olive oil
1 brown onion, finely diced
1 chorizo sausage, diced
1 small red capsicum, finely diced
1 tsp smoked paprika
1 ½ cups uncooked white or jasmine rice
1 tin (400g) chopped tomatoes
1 cup chicken or vegetable stock
¾ cup frozen peas, defrosted
Method
1. Heat olive oil in a large pan over medium to high heat. Add onion, chorizo and capsicum and sauté until soft, approximately 3-5 minutes. Add smoke paprika cook for a further 1 minute until fragrant.
2. Add rice, tinned tomatoes, vegetable stock and raw prawn. Stir well to combine all ingredients and coat the rice. Place a lid on to the pan, turn the heat to low and allow to cook for 20-25 minutes until rice has absorbed all the water.
3. Once rice has cooked, stir through peas. Serve immediately.
