Vietnamese Prawn Lettuce Cups
Serves 3-4
Time 15 minutes
INGREDIENTS
1x 280g DeCosti Cooked & Peeled Prawns, remove tails
1 bunch of cos lettuce
1 carrot, thinly sliced or grated
1 cucumber, thinly sliced
1x 300g pack cooked rice noodles
hoisin or peanut/satay sauce, to serve
METHOD
1. Cut the bases off the lettuce and separate the leaves. Halving the large outer ones. Wash and set aside
2. Taking each leave, add a small handful of noddles top with carrot, cucumber and a couple of prawns. Repeat until all the ingredients are used up.
3. Serve on a large platter with the dipping sauce
